Crispy Caramel Quinoa Slice

Ingredients
- 3 cups Flannerys Own Organic Puffed Quinoa
- 3 TBS Flannerys Own Chia Seeds
- 8-10 medjool dates
- 1/2 cup cranberries
- 3 TBS Flannerys Own Organic Pepitas
- 2 TBS Flannerys Own Organic Linseed Meal
- 2 TBS Flannerys Own Organic Peanut Butter (or coconut paste for a nut friendly version)
- 3 TBS Flannerys Own Organic Maple Syrup
Method
- Preheat over to 160 degrees.
- Remove pits from dates and place into a bowl of hot water. Allow to soak for 5 minutes then draining 3/4 of the water from the bowl.
- Add dates, remaining water, peanut butter and maple syrup to a blender and blend until smooth. Add more water if needed until you reach the consistency of thick caramel sauce.
- In a food processor, add all remaining dry ingredients.
- Pulse processor for 10-15 seconds or until the ingredients have combined.
- Next, pour the date caramel through the spout of processor and continue to pulse until combines and all ingredients are sticky.
- Press into a lined baking tray and bake for 15 minutes of until golden,
- Optional: Melt 80% dark chocolate in a bowl over hot water and drizzle over the slice once cool.
