Walnut Crusted Chicken

A healthier take on chicken schnitzel, using nuts and almond meal.

Ingredients

  • 1/2 cup Flannerys Almond Meal
  • 1 cup Flannerys Walnuts
  • 2 organic free range eggs
  • 1/3 cup fresh rosemary, finely chopped
  • Salt and pepper to season
  • 1 TBS Flannerys Macadamia Oil
  • Organic chicken breast, skin off and cut into strips

Method

  • Lightly beat eggs until frothy, then set aside
  • Pulse the walnuts, almond meal, rosemary and seasoning together
  • Heat a non-stick pan with the Macadamia Oil – low/medium heat
  • Take the chicken pieces – dip into the egg mixture, followed by the dry mix making sure the coating is covering the whole chicken piece
  • Add chicken strip to the pan and cook until golden brown on all sides and the juices are running clear – this will depend on the size and thickness of your chicken strip (approx. 10 – 20 mins)
