Walnut Crusted Chicken
A healthier take on chicken schnitzel, using nuts and almond meal.
Ingredients
- 1/2 cup Flannerys Almond Meal
- 1 cup Flannerys Walnuts
- 2 organic free range eggs
- 1/3 cup fresh rosemary, finely chopped
- Salt and pepper to season
- 1 TBS Flannerys Macadamia Oil
- Organic chicken breast, skin off and cut into strips
Method
- Lightly beat eggs until frothy, then set aside
- Pulse the walnuts, almond meal, rosemary and seasoning together
- Heat a non-stick pan with the Macadamia Oil – low/medium heat
- Take the chicken pieces – dip into the egg mixture, followed by the dry mix making sure the coating is covering the whole chicken piece
- Add chicken strip to the pan and cook until golden brown on all sides and the juices are running clear – this will depend on the size and thickness of your chicken strip (approx. 10 – 20 mins)
