Vegan Mac N Cheese
We’ve been busy in the kitchen perfecting our Vegan Mac N Cheese recipe and we’re finally ready to share it with you! We’ve taken inspiration from a few places and our recipe is based on cauliflower & cashews for the ultimate cheesy flavour… Want to know our other secret ingredient? WHAT IS SAVORY YEAST FLAKES?
Basically it is deactivated yeast which comes in crisp golden flakes. You may be thinking of brewers yeast, which is used to make beer – this isn’t the same as savory yeast but it’s related. Learn more here…
Ingredients
1/2 small head of cauliflower, steamed until very soft |
1/2 cup Flannerys Own Cashews, soaked overnight in water & drained |
1/4 cup Flannerys Own Savoury Yeast Flakes |
1 large garlic clove |
1 cup almond milk |
1 TBS lemon juice |
1 tsp onion powder |
1/2 tsp chilli powder |
1/4 tsp ground turmeric |
1/4 cup breadcrumbs |
Salt & pepper to season |
400g pasta of choice, cooked according to directions on packet |
Method
1. Preheat oven to 180 degrees.
2. Add all ingredients except breadcrumbs & pasta into a food processor & process on high until smooth.
3. In a large bowl fold cheesy sauce through pasta. Transfer to an oven proof dish and sprinkle with breadcrumbs.
4. Bake in oven for 10 minutes or until golden.
