Valentine’s Choc Berry Jelly Slice
A dreamy match made in heaven – try this decadent Choc Berry Jelly Slice topped with Peanut Butter Mousse. It’s the perfect treat to spoil your loved one this Valentine’s Day!

Peanut Butter Mousse Ingredients:
- 1 cup Ridiculously Delicious Smooth Peanut Butter
- 2 tbsp stevia
- 1/2 cup Barambah Pure Cream
Jam Filling Ingredients:
- 375g red berries of choice (raspberries, strawberries, cranberries)
- 1/2 cup maple syrup or honey
- 1 tbsp organic lemon juice
Chocolate Layer:
- 2 1/2 tbsp Flannerys OWN/Kunara Cacao Powder
- 100 grams 85% cocoa dark chocolate
- 100 grams milk chocolate
- 2 tbsp coconut cream
- 2 1/3 cups Nature’s Path Organic Crispy Rice
- 2 tsp sea salt
- 1/4 cup frozen berries, roughly chopped to garnish
Method:
- Layer One: Chocolate
Using a double boiler or in a bowl, melt the chocolate with the coconut cream. Once melted, add the cacao powder and sea salt. Mix well and then add the crispy rice.
- Pour into an oiled or lined brownie tin or baking dish. Refrigerate until hard (1 hour).
- Layer Two: Jam
Add the fruit into a medium pot, cooking on medium until the fruit has broken down. Add the sugar and lemon juice, cooking until thick (10 minutes).
- Once the crispy treat layer has set, top with the jam, spreading it out. Freeze until set (1-2 hours based on jam hotness)
- Layer Three: Mousse
Whip the cream in a medium bowl with the stevia until thick but not stiff peaks. Add the peanut butter and whip until incorporated.
- Pour the mousse over the jam layer, finishing with the chopped frozen berries sprinkled over the top. Freeze until set (1 hour).
- Remove from the freezer, tap the slice out of the dish and slice. Serve or store in an airtight container.
