Toasted Strawberries on Sourdough

 

Toasted strawberries on sourdough, drizzled with honey and garnished with thyme, spooned over a creamy whipped ricotta base. It’s the perfect Sunday brunch treat.

Ingredients:
  • 2 punnet Ashbern Organic Farm strawberries, ends removed
  • 1 tbsp honey
  • Fresh thyme
  • 2 slices Bread Social Sourdough
  • Mungalli Organic Ricotta

 

 

Method:
  1. Preheat oven to 180C
  2. Rinse strawberries and add to a medium sized baking dish.
  3. Drizzle with honey and sprinkle thyme on top. Place into the oven and bake for 20 minutes, stirring half way through baking time. Set aside to cool.
  4. Place bread in the oven until toasted.
  5. Place ricotta in food processor and pulse for 30 seconds to a minute until light and airy.
  6. Spread whipped ricotta on the bread slices.
  7. Spoon roasted strawberries evenly over ricotta.
  8. Garnish with thyme and extra honey for sweetness.
