Maple Roasted Parsnip Fries

A sweet twist on roast vegies

Ingredients

  • 4 organic parsnips, washed (you could also use sweet potato, carrot or potato)
  • 2 TBS Flannerys Organic Maple Syrup
  • 2 TBS Flannerys EV Olive Oil
  • Himalayan Salt for seasoning

Method

  • Preheat oven to 200 degrees
  • Cut parsnip length ways into fries
  • In a large bowl toss the parsnip with the oil, maple syrup and salt, making sure the fries are evenly coated
  • Spread evenly over a lined baking tray and pop in the oven
  • Bake for about 20 – 30 minutes, tossing a couple of times to ensure all sides are cooked golden brown
  • They should be crisp on the outside and tender in the middle
