Mango Passion Pavlova

 

Our mouthwatering layered mango passion pavlova recipe will delight your guests on Christmas Day. With whipped COYO yoghurt, creamy mango and tangy passionfruit, this dessert will be the talk of the table.

mango passion pavlova

Ingredients:
  •  6 egg whites 

  • 1 cup caster sugar 

  • 2 tsp cornstarch 

  • 1 tsp apple cider vinegar 

  • 1/2 tsp vanilla bean 

  • 2 cups COYO Greek Yoghurt

  • 1/4 cup icing sugar 

  • Pulp of 2-3 passionfruit

  • 3 mangos 

  • Mint leaves to garnish 

 

 

Method:
  1. Preheat oven to 120°C and line two oven trays with baking paper. Dust with corn starch.  
  2. In a stand mixer add 6 egg whites and whisk until soft peaks form. 
  3. Gradually add 1 tbsp of sugar at a time, until the meringue is thick and glossy. 
  4. Add cornstarch, vinegar and vanilla and whisk until just combined. 
  5. Divide the meringue in half and spoon onto baking paper, creating a circle shape. 
  6. Use a small spatula to form little peaks around the edge of the pavlova. 
  7. Bake in the oven for 90 minutes or until the pavlova is dry to the touch. 
  8. Turn off the oven and leave pavlova in the oven to cool overnight. 
  9. To decorate, use an electric mixer to whisk the coconut yoghurt, and icing sugar in a medium bowl until firm peaks form. Optional, add a few mango pieces into the cream. 
  10. Spoon cream onto the top of the pavlova.
  11. Decorate with fresh fruit.
