Dairy-Free Festive Eggnog

This is a little tradition of mine that I started five years ago and has become a must have every Christmas. That is one of the nice things about having a tradition, it tends to have all of your special people get together for celebration and trust me, this certainly will. I remember saying to my family “I’m going to make us some eggnog this Christmas Eve” and I was greeted with a lot of scrunched up noses and uncertainty. Once I made up a batch of the recipe below I spent the whole night making us more and more.

 Now every Christmas Eve my friends and family start flowing into our home in the hope of getting their hands on a delicious glass of my famous dairy-free eggnog. There are a lot of eggnog recipes out there and I admire all of them because I think they come with a special bit of love that has stemmed through generations. But this one is a must try! Put a bit of love into the making of it and the festive season vibes will be flowing throughout your home, making the Christmas Eve late night prep time a whole lot more fun. How can it not when there is cinnamon and an extra nudge of alcohol in it?! I love serving this in some vintage crystal glasses, making it all the more special to enjoy.

Ingredients

Makes 8

(you can make a non-alcoholic version if you like)

3 cups rice milk

1 cup coconut cream

½ cup pure maple syrup

1 tsp pure vanilla extract

1 tsp ground cinnamon

1 tsp freshly grated nutmeg

1 tsp mixed spice

4 large organic egg yolks

¼ cup brandy

¼ cup sherry

¼ cup dark rum

Method

  • 1. Blend all ingredients together until it is light and fluffy. Pour over a glass of ice and a ‘must do’ finishing touch is to sprinkle with freshly grated nutmeg.

  • 2. To go the extra mile with your eggnog prior to pouring the blended ingredients in the glass, on a plate mix a little bit of cinnamon with some brown sugar, wet the top of the glass and dip it into the mix on the plate.

  • 3. Let this dry before pouring your eggnog into the glass with ice. Serve immediately and enjoy.
