Collagen is the most abundant protein in our bodies! Saying this, we lose it as we get older so it is important to increase our intake where possible. This collagen booster soup is the perfect way to pack in all the extra nutrients. The vitamin C found in leafy green vegetables increase our collagen absorption & the nutra-organics powder supplements specifically target skin, nail, gut & bone strength/structure. Increasing collagen intake is associated with several different health benefits and this soup is the perfect, tasty way to increase that.

Ingredients:
  • 4 large organic potatoes
  • 2 organic leeks
  • 2 cloves organic garlic – minced
  • 2 cups organic spinach
  • 1 cup organic kale
  • 1 cup organic cauliflower
  • 2 tbsp organic butter
  • 500g ROZAS gourmet chicken bone broth
  • 2 scoops of each nutra-organics collagen powder
  • Nutra Organics collagen beauty – skin, hair & gut health
  • Nutra Organics collagen body – bone strength structure
  • 3 cups filtered water
  • Salt & pepper
Method:
  1. Chop leeks, potatoes, cauliflower, kale & spinach into small pieces.
  2. Heat butter in a large pot on medium heat. Add garlic & leeks and cook until translucent.
  3. Add potato & cauliflower. Turn to high heat and add bone broth & water, bring to boil.
  4. Reduce to medium heat and cook for 30 mins.
  5. Add collagen powders, kale, spinach & salt and pepper. Cook until potatoes are soft.
  6. Remove from the heat and drain some of the excess liquid (keep this to the side in case you need to add back into the soup)
  7. Blend with stick blender or in a blender (you can add excess stock now if you prefer a thinner consistency)
