Chocolate Coconut Seed Bars

These Chocolate Coconut Seed Bars are a rich, no-bake bar full of vitamins and minerals that is bound to keep you satisfied until your next meal. Don’t be fooled though, these are a sweet snack that will keep you coming back for more. Feel free to alter the dry ingredients to include your favourite dried fruit and nuts.

Ingredients:
    • 1 1/2 cup almonds
    • 1 cup desiccated coconut
    • 1/2 cup macadamia nut pieces
    • 1/4 sunflower seeds
    • 1/4 cup pumpkin seeds
    • 1/4 cup cranberries
    • 1/4 cup cacao nibs
    • 1/4 cup cacao
    • 2 tsp cinnamon
    • 2 tsp of maca powder
    • 1 tbsp flaxmeal
    • 2 tbsp chia seeds
    • 1 tbsp honey
    • 1 tsp vanilla bean
    • 1/3 cup tahini
    • 1/2 cup melted cacao butter

 

 

Method:
  1. Place cacao butter into saucepan on medium heat until it turns into a liquid. Stir regularly.
  2. In a food processor, blend almonds until a fine crumb.
  3. Place ground almonds, and all other ingredients into a mixing bowl, including melted cacao butter.
  4. Stir until mixture is combined.
  5. Place flat into a lined baking tray.
  6. Place in freezer for 30 minutes.
  7. Remove, slice and enjoy!
