Detox Buddha Bowl

This wholesome and fresh Buddha Bowl is packed to the brim full of nourishing ingredients. The perfect option for a warm summer’s evening. With delicious ingredients like organic chickpeas, lentils, cucumber, avocado and kale, this delicious bowl is bound to have your tastebuds dancing. A must try this summer!

Time: 25 minutes

Ingredients

Bowl

  • 400g Ceres Organics Chickpeas, rinsed and drained well
  • 400g Ceres Organics Lentils, rinsed and drained well
  • 1/2 cup chopped coriander
  • 1/2 lemon, juiced
  • 1/2 cup olive oil
  • 1/2 cucumber, peeled into ribbons
  • 1 avocado, halved, stone removed and sliced thinly
  • 3 leaves of kale, washed well and stem removed

 Tahini Dressing 

  • 1/2 cup Flannerys OWN Unhulled Tahini
  • 1/2 lemon, juiced
  • 2 tablespoons maple syrup
  • 2 large cloves garlic, minced

 To serve

  • Fresh lemon
  • Black pepper

 

Buddha Bowl

Method
  1. In a large bowl, mix the chickpeas, lentils, coriander, lemon juice and olive oil. Set aside.
  2. In a medium bowl, whisk the tahini dressing ingredients together, adding a tablespoon of warm water at a time to help thin out the tahini.
  3. Assemble your bowl with all of the ingredients.
