Asian Inspired Nourish Bowl

vegan, fodmaps friendly, soy-free | makes 12 | Recipe provided by Niulife

It’s time to nourish your tummy with goodness. This dish is perfect for a healthy plant-based lunch or dinner with an asian inspired twist.

Ingredients

Baked Veggies Marinade:

2 tbsp Niulife Naked Cocomino sauce

1/2 tsp freshly ground ginger

1 tbsp minced garlic

2 tsp sesame oil

salt + pepper

Baked Tofu Marinade:

1 tbsp peanut butter

1 1/2 tbsp Niulife Naked Cocomino sauce

1/2 tbsp lime juice

salt + pepper

Method

  • 1. Whisk all veggie marinade ingredients together and marinade veggies of choice in the mixture.

  • 2. Bake in oven at 180°C until crispy.

  • 3. Whisk all tofu marinade ingredients together and coat tofu blocks with marinade for at least 30min (or even overnight).

  • 4. Bake in oven at oven at 180°C until crispy.

  • 5. Combine veggies and tofu in a bowl and enjoy!
