Best Ever Gluten-Free Banana Bread
What’s being cozy without banana bread? Delicious, soft and comforting – it’s not hard to make and is a yummy treat to take to school or work. The addition of chocolate chips and walnuts – and being free of gluten – makes this the best ever banana bread set to change your life!

Ingredients
2 cups Flannerys Own gluten free flour |
1 tsp aluminium-free baking powder |
1 tsp bicarb soda |
¼ tsp Himalayan fine sea salt |
½ cup certified organic Rapadura or coconut sugar |
110g butter, ghee or coconut oil, softened |
2 free range, organic eggs |
2 tbsp milk of choice |
½ tsp vanilla |
4 – 5 ripe organic bananas, mashed |
1 cup organic GF chocolate chips |
¼ cup insecticide-free walnuts, chopped |
Method
1. Preheat oven to 175 degrees. Lightly grease a loaf pan (9 x 5 inches).
2. Combine flour, baking powder, bicarb soda and salt in a large bowl. Set aside.
3. In another bowl, cream together sugar and butter. Stir in eggs, milk, vanilla, mashed bananas, chocolate chips and walnuts until well combined. Add to the flour mixture, stirring until combined.
4. Pour batter into loaf pan. Bake for 50 – 55 minutes, until a skewer inserted into the centre comes out clean. Let cool, before turning onto a wire rack. Enjoy served warm!
