Popcorn Bars

Popcorn bars don’t have to be full of added sugar – try this healthy version packed with nuts and dried fruit! Making your own bars means you know exactly what they contain and can enjoy them guilt free. The kids will love taking them to school as a treat or an after school snack at home.

Gluten Free, Vegetarian

Makes: 15

Ingredients

½ cup raw honey

2 tbsp Flannerys Own organic extra virgin coconut oil

¼ cup plus 2 tbsp popcorn kernels, popped to make 10 cups

1 cup organic roasted almonds, roughly chopped

2/3 cup dried cranberries

60g organic gluten-free chocolate

Method

  • 1. Lightly grease a 8 x 8” square pan.

  • 2. In a small saucepan, melt the honey and coconut oil until boiling, stirring occasionally. Let simmer for 2 minutes, then take off the heat.

  • 3. In a large bowl, combine popcorn, almonds and dried fruit. Pour over honey mixture, coating the popcorn evenly, until well combined. Pour mixture into the square pan, pressing down to flatten.

  • 4. Melt chocolate, then drizzle over popcorn mixture in a pattern. Refrigerate for at least 30 minutes, cut bars and enjoy!
