Watermelon Ice Cream

Cool down on a hot day with watermelon ice cream! The addition of dates provides plenty of fibre and essential nutrients. Its natural light sweetness is delicious and refreshing, plus being free of added sugar means you can enjoy it guilt free!

Gluten Free, Dairy Free, Paleo

Ingredients

1 tin organic coconut milk

4-5 pitted Medjool dates

2 cups seedless watermelon, cubed

1 tsp organic pure maple syrup

Method

  • 1. Blend all ingredients until smooth.

  • 2. Transfer to a baking tin and freeze for 3 - 4 hours or until hardened.

  • 3. Break up and transfer back to the blender, blitzing for a few minutes until creamy.

  • 4. Place back in baking tin and freeze for another 30 - 60 minutes.

  • 5. Scoop and enjoy!
