Thin Crêpes with Manuka Honey

Weekends are for sleeping in, relaxing … and crêpes! They’re lighter, thinner and crispier than its cousin (pancakes) and make for the perfect weekend breaky. Drizzle some nourishing Mānuka honey for its natural, earthy sweetness and potential health benefits.

Servings: 8 crêpes

Gluten free, vegetarian

Ingredients

2 organic eggs

1 cup milk of your choice

½ cup water

2 tsp melted ghee, butter or Flannerys Own Organic Olive Oil

1 tsp Mānuka honey

Pinch of Flannerys Own Himalayan Sea Salt

1 1/2 cups amaranth flour, you may need to add more or less depending on the mixture

Method

  • 1. In a large bowl, whisk all ingredients except for flour together. Add 1 ¼ cups of the flour, whisk and check the consistency. If it’s too runny, add ¼ cup more and whisk until smooth.

  • 2. Heat a lightly greased (or non-stick) fry pan over medium heat. Pour a small amount of batter into the pan and swirl around until a thin layer has formed. Using a spatula to check when it’s golden, flip to fry the other side for 1 minute.

  • 3. Serve with a generous drizzle of Mānuka honey and fresh fruit.
