Raw Lemon Bites

A raw, vegan, grain and gluten free citrus snack perfect for afternoon tea or as a lunch box filler. And with so few ingredients it wont take you long to whip up a bunch of these beauties!

Ingredients

  • 1 TBS Flannerys Organic Coconut Oil Extra Virgin, softened
  • 1/2 cup Flannerys Organic Shredded Coconut
  • 1/2 cup Flannerys Organic Almond Meal
  • 1 TBS  Flannerys Organic Maple Syrup
  • Juice of half a lemon
  • Rind of half a lemon
  • Pinch of Flannerys Himalayan Salt

Method

  • Combine all ingredients, except shredded coconut, in a mixing bowl
  • Roll mixture into 10-12 small balls and cover in the shredded coconut (if you are having trouble bringing the mixture together try adding a little more coconut oil or a dash of water)
  • Refrigerate until cool and set
  • ENJOY!
