Zucchini Salad

This zucchini salad is a fresh and simple side that’s perfect for a summer BBQ! Shaved zucchini tossed with toasted garlic pine nuts, a sprinkle of parmesan and a vinaigrette makes it so effortless to throw together and insanely delicious. We would recommend pairing it with a herby chicken or lamb!

Serves: 6-8  |  Time: 10 minutes

Ingredients:

  • 4 zucchini, washed
  • ¼ cup pine nuts
  • ½ tsp garlic powder
  • ½ cup parmesan, shaved
  • Braggs Vinegarette
  • Salt, pinch

Method:

  1. Using a vegetable peeler, peel zucchini to create thin ribbons. Once you hit the seeds, rotate and peel on another side until you use as much of the zucchini as you can. Place in a large bowl.
  2. In a frying pan over medium heat, add pine nuts, garlic powder and salt. Coat well and gently toast until pine nuts are golden. Remove from heat and allow to cool.
  3. Add pine nuts to zucchini and top with shaved parmesan. Dress with your favourite vinaigrette and serve immediately alongside a protein source.
