Vegan Stuffed Spicy Capsicums

Say hello to the easiest, tastiest, meat-free Mexican dish! An absolute crowd pleaser and such and easy entertaining meal. Upton’s Naturals pulled jackfruit give all delicious meaty tastes and textures of pulled pork but is 100% vegan – you won’t know the difference. The sriracha flavour is the perfect way to warm up on a cold winter evening.

Ingredients:
  • 3 organic capsicums (the larger the easier!)
  • 1 packet UPTONS pulled jackfruit (we used the siracha flavour for spice)
  • 1 can absolute organic black beans (drained)
  • 1 can absolute organic diced tomatoes
  • 1 cup organic spinach
  • 1 tbsp olive oil
  • Salt and pepper
  • 1 lemon
  • Peace Love & Vegetables KIM-CHI (optional)

Method:
  1. Preheat oven to 200 degrees
  2. Heat olive oil in fry pan and cook black beans, tomatoes and jackfruit (add salt and pepper here if wanted) on high for 7-10 minutes or until most of the liquid is gone (you don’t want it too watery)
  3. Slice the top of the capsicums (like a lid), and carefully remove cores and seeds from capsicums and place on a lined baking tray.
  4. Fill capsicums with jackfruit mixture and place in the oven for 17-20 minutes
  5. We love ours topped with Peace Love & Vegetables kimchi & a squeeze of lemon but can also be served with side salad or brown rice
  6. Enjoy!
