
Vegan Stuffed Spicy Capsicums

Say hello to the easiest, tastiest, meat-free Mexican dish! An absolute crowd pleaser and such and easy entertaining meal. Upton’s Naturals pulled jackfruit give all delicious meaty tastes and textures of pulled pork but is 100% vegan – you won’t know the difference. The sriracha flavour is the perfect way to warm up on a cold winter evening.
Ingredients:
- 3 organic capsicums (the larger the easier!)
- 1 packet UPTONS pulled jackfruit (we used the siracha flavour for spice)
- 1 can absolute organic black beans (drained)
- 1 can absolute organic diced tomatoes
- 1 cup organic spinach
- 1 tbsp olive oil
- Salt and pepper
- 1 lemon
- Peace Love & Vegetables KIM-CHI (optional)
Method:
- Preheat oven to 200 degrees
- Heat olive oil in fry pan and cook black beans, tomatoes and jackfruit (add salt and pepper here if wanted) on high for 7-10 minutes or until most of the liquid is gone (you don’t want it too watery)
- Slice the top of the capsicums (like a lid), and carefully remove cores and seeds from capsicums and place on a lined baking tray.
- Fill capsicums with jackfruit mixture and place in the oven for 17-20 minutes
- We love ours topped with Peace Love & Vegetables kimchi & a squeeze of lemon but can also be served with side salad or brown rice
