
Vegan Jackfruit Tacos
Easy and quick, Upton’s Naturals jackfruit varieties are pre-marinated in delicious flavours so the work is already done for you. We’ve used the Bar-B-Que flavour for these tacos for a delicious smokey and summery hit. Combined with chopped veggies and you’ll have tasty tacos for the family in minutes.

Makes: 3-4 tacos
Ingredients
1 tbsp Flannerys Own organic olive oil |
1 pack Upton’s Naturals Bar-B-Que Jackfruit |
1 organic red onion, sliced |
1 punnet organic cherry tomatoes, sliced in halves |
1 bunch organic coriander, chopped roughly |
1 organic chili, sliced |
8-10 gluten-free soft tacos |
Optional: 2 organic fresh limes |
Method
1. Heat oil in a frypan over medium-high heat. Add the jackfruit and cook for 8-10 minutes until jackfruit is soft, stirring occasionally. Shred using two forks, breaking up the bigger pieces.
2. Combine onion, tomatoes, coriander and chili in a medium bowl.
3. Lay soft tacos on a chopping board, spoon a generous amount of jackfruit on each taco, then the vegetable and herb mix. Sprinkle lime juice on each taco. Enjoy immediately.
