Vegan, vegetarian, gluten free, dairy free

Makes: 3-4 tacos

Ingredients

1 tbsp Flannerys Own organic olive oil

1 pack Upton’s Naturals Bar-B-Que Jackfruit

1 organic red onion, sliced

1 punnet organic cherry tomatoes, sliced in halves

1 bunch organic coriander, chopped roughly

1 organic chili, sliced

8-10 gluten-free soft tacos

Optional: 2 organic fresh limes

Method

  • 1. Heat oil in a frypan over medium-high heat. Add the jackfruit and cook for 8-10 minutes until jackfruit is soft, stirring occasionally. Shred using two forks, breaking up the bigger pieces.

  • 2. Combine onion, tomatoes, coriander and chili in a medium bowl.

  • 3. Lay soft tacos on a chopping board, spoon a generous amount of jackfruit on each taco, then the vegetable and herb mix. Sprinkle lime juice on each taco. Enjoy immediately.
