Street Corn
Gluten free and vegan friendly, when drizzled with this creamy dressing!
Make sure you use local, organic sweet corn.
Ingredients:
- Fresh Organic Sweet Corn ( as many as you need to feed your friends!)
- 1 cup of Flannerys Organic Cashews (soaked in water overnight, or at least 5 hours)
- 1/3 cup organic coconut milk
- 1/3 cup fresh lime juice
- 1/2 tsp dried paprika (optional)
- 1/4 cup of filtered water
- Flannerys Himalayan Salt to season + fresh black pepper
- 1/2 cup of fresh herbs to garnish ( coriander, flat leaf parsley)
Method
- preheat a bbq grill or oven
- clean the corn cobs by removing the husks and rinsing well under cold water
- Grill corn cobs over medium heat, turning often
- Meanwhile, prepare the dressing by adding the drained cashews, lime juice, coconut milk, salt, pepper and water to a blender.
- Process until smooth and creamy ( you may choose to add a little more water depending on desired consistency)
- Serve grilled corn with dressing and fresh herbs
