Smashed Potatoes with Roza’s Gourmet

Serves: 4

Ingredients
  • 5 Tbsp Roza’s Sundried Tomato Wholegrain Mustard
  • 8 kipfler potatoes
  • 3 tbsp olive oil
  • Pinch of salt
  • Few good cracks of pepper
  • Feta and sprouts to garnish
Method
  1. Bring a large pot of water to the boil. Cook potatoes until soft – around 20-30 minutes.
  2. Preheat oven to 180ºC.
  3. Drain potatoes and let them dry.
  4. Line a tray with baking paper place potatoes on the tray, leaving them around an inch apart.
  5. Using something with a flat bottom (like the bottom of a saucepan or mug) to squish them down, trying to keep them in one piece.
  6. Drizzle olive oil over the top and season with salt and pepper.
  7. Bake for 40 minutes or until golden.
  8. Serve on a plate and top with Roza’s Gourmet Sundried Tomato Wholegrain Mustard, feta and sprouts.
  9. Serve immediately and enjoy!
