Roast Chicken with Chia Stuffing

This recipe is gluten free & full of delicious, wholesome ingredients, unlike traditional stuffing which is mainly made out of butter & bread.

Ingredients

  • 1/4 cup Flannerys Own Organic Chia Seeds
  • 1 cup water
  • 1 TBS Flannerys Own Organic Coconut Oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves
  • 4 TBS fresh rosemary, roughly chopped
  • 1/2 cup Flannerys Own Brown Rice, cooked
  • 1/4 cup Flannerys Own Walnut Halves, roughly chopped
  • 5 Flannerys Own Dates, roughly chopped
  • 1 lemon, zested & juiced
  • Salt & pepper for seasoning
  • 1 free range organic chicken
  • Extra coconut oil for cooking

Method

  • Add the chia seeds to the water & set aside.
  • Preheat oven to 200 degrees. In a small fry pan over medium heat add the coconut oil, onion, garlic & rosemary and saute until golden.
  • Add in the rice, walnuts and dates and continue sauteing.
  • Remove from the heat & stir in the lemon juice, lemon zest & chia seeds. Season with salt & pepper.
  • Stuff the chicken with the mixture & tie the chicken legs together with kitchen string.
  • Drizzle a small amount of coconut oil over the chicken & season with salt & pepper.
  • Roast the chicken for approximately an hour & a half or until golden and cooked through.
  • Rest the chicken covered in foil for 5-10mins before serving with your favourite vegetables.
