Roast Chicken with Chia Stuffing
This recipe is gluten free & full of delicious, wholesome ingredients, unlike traditional stuffing which is mainly made out of butter & bread.
Ingredients
- 1/4 cup Flannerys Own Organic Chia Seeds
- 1 cup water
- 1 TBS Flannerys Own Organic Coconut Oil
- 1 brown onion, finely chopped
- 2 garlic cloves
- 4 TBS fresh rosemary, roughly chopped
- 1/2 cup Flannerys Own Brown Rice, cooked
- 1/4 cup Flannerys Own Walnut Halves, roughly chopped
- 5 Flannerys Own Dates, roughly chopped
- 1 lemon, zested & juiced
- Salt & pepper for seasoning
- 1 free range organic chicken
- Extra coconut oil for cooking
Method
- Add the chia seeds to the water & set aside.
- Preheat oven to 200 degrees. In a small fry pan over medium heat add the coconut oil, onion, garlic & rosemary and saute until golden.
- Add in the rice, walnuts and dates and continue sauteing.
- Remove from the heat & stir in the lemon juice, lemon zest & chia seeds. Season with salt & pepper.
- Stuff the chicken with the mixture & tie the chicken legs together with kitchen string.
- Drizzle a small amount of coconut oil over the chicken & season with salt & pepper.
- Roast the chicken for approximately an hour & a half or until golden and cooked through.
- Rest the chicken covered in foil for 5-10mins before serving with your favourite vegetables.
