Raw Lemon Bites
A raw, vegan, grain and gluten free citrus snack perfect for afternoon tea or as a lunch box filler. And with so few ingredients it wont take you long to whip up a bunch of these beauties!
Ingredients
- 1 TBS Flannerys Organic Coconut Oil Extra Virgin, softened
- 1/2 cup Flannerys Organic Shredded Coconut
- 1/2 cup Flannerys Organic Almond Meal
- 1 TBS Flannerys Organic Maple Syrup
- Juice of half a lemon
- Rind of half a lemon
- Pinch of Flannerys Himalayan Salt
Method
- Combine all ingredients, except shredded coconut, in a mixing bowl
- Roll mixture into 10-12 small balls and cover in the shredded coconut (if you are having trouble bringing the mixture together try adding a little more coconut oil or a dash of water)
- Refrigerate until cool and set
