Quinoa & Goji Berry Cookies

These delicious cookies can be eaten any time of day – even a healthy breakfast on the go!

Ingredients

  • 1 1/3 cup Flannerys Organic Quinoa Flakes
  • 1/2 cup Flannerys Organic Coconut Flour
  • 2 TBS Flannerys Organic Extra Virgin Coconut Oil
  • 2 ripe bananas
  • 5 TBS Flannerys Organic Palm Sugar
  • 3/4 cup apple sauce
  • 1/2 cup Flannerys Slivered Almonds
  • 1/2 cup Flannerys Organic Goji Berries
  • 2 TBS sesame seeds
  • 1 tsp vanilla extract
  • Pinch of Flannerys Himalayan Salt

Method

  • Preheat oven to 180 degree and line biscuit tray with baking paper.
  • Combine the coconut oil and sugar in a bowl
  • Add the mashed banana, apple sauce and vanilla extract mixing well until combined
  • Next mix in the quinoa flakes and coconut flour until everything is well combined.
  • Fold in the goji berries, slivered almond and sesame seeds until you have a thick batter.
  • Spoon carefully onto the biscuit tray, and sprinkle with sea salt. Cook for 20 minutes or until golden brown
  • Remove from oven and transfer to rack to cool.
