Quinoa & Goji Berry Cookies
These delicious cookies can be eaten any time of day – even a healthy breakfast on the go!
Ingredients
- 1 1/3 cup Flannerys Organic Quinoa Flakes
- 1/2 cup Flannerys Organic Coconut Flour
- 2 TBS Flannerys Organic Extra Virgin Coconut Oil
- 2 ripe bananas
- 5 TBS Flannerys Organic Palm Sugar
- 3/4 cup apple sauce
- 1/2 cup Flannerys Slivered Almonds
- 1/2 cup Flannerys Organic Goji Berries
- 2 TBS sesame seeds
- 1 tsp vanilla extract
- Pinch of Flannerys Himalayan Salt
Method
- Preheat oven to 180 degree and line biscuit tray with baking paper.
- Combine the coconut oil and sugar in a bowl
- Add the mashed banana, apple sauce and vanilla extract mixing well until combined
- Next mix in the quinoa flakes and coconut flour until everything is well combined.
- Fold in the goji berries, slivered almond and sesame seeds until you have a thick batter.
- Spoon carefully onto the biscuit tray, and sprinkle with sea salt. Cook for 20 minutes or until golden brown
- Remove from oven and transfer to rack to cool.
