Quinoa & Chia Loaf
Gluten Free, Vegan, Sugar Free

This quinoa & chia loaf is gluten free, sugar free & vegan! Perfect for people with intolerances or allergies. Unlike traditional loaves it is protein and nutrient rich and with a moist center it is best served lightly toasted with your favourite toppers. This recipe is super simple and a great way to avoid all the nasties of regular store bought loaves!
Ingredients:
- 1 ¾ cups OWN quinoa seeds
- ¼ cup OWN chia seeds
- 1/2 cup filtered water
- ¼ cup organic olive oil
- ½ tsp Himalayan sea salt
- Juice from ½ organic lemon
- ½ tsp baking soda
Method:
- Soak quinoa in plenty of water and chia seeds with ½ cup separately overnight.
- Pre heat oven to 160 degrees and line a loaf tin with baking paper
- Drain quinoa & add to a food processor
- Add chia jell (this should be a jelly consistency and you wont have to drain it)
- Add water, oil, salt, baking soda & lemon and mix in food processor
- Spoon batter into lined baking tin and bake for 1 ½ hours
- Remove from oven and allow to cool completely – the bread should be crisp on the outside and slightly moist in the middle
- Best enjoyed lightly toasted
