Pumpkin Lucuma Fudge
A perfect afternoon treat this winter using sweet organic pumpkin.
- 1 cup diced butternut pumpkin, roasted
- 3 TBS Flannerys Own Organic Coconut Oil
- 3 TBS Flannerys Own nut butter of choice (we like to use almond or peanut)
- 1 TBS Flannerys Own Organic Maple Syrup
- 2 TBS Flannerys Own Organic Lucuma Powder
- 1/2 TSP ground cinnamon
- Pinch Flannerys Own Fine Himalayan Salt
- Add all your ingredients to a food processor and pulse until well combined.
- Using a spatula, scrape down the sides of the food processor and pulse again.
- Transfer the mixture to a sliced cake tin and place in the freezer. Once the fudge is set, cut it into cubes and enjoy.
