Pumpkin Lucuma Fudge

A perfect afternoon treat this winter using sweet organic pumpkin.

Ingredients

  • 1 cup diced butternut pumpkin, roasted
  • 3 TBS Flannerys Own Organic Coconut Oil
  • 3 TBS Flannerys Own nut butter of choice (we like to use almond or peanut)
  • 1 TBS Flannerys Own Organic Maple Syrup
  • 2 TBS Flannerys Own Organic Lucuma Powder
  • 1/2 TSP ground cinnamon
  • Pinch Flannerys Own Fine Himalayan Salt

Method

  • Add all your ingredients to a food processor and pulse until well combined.
  • Using a spatula, scrape down the sides of the food processor and pulse again.
  • Transfer the mixture to a sliced cake tin and place in the freezer. Once the fudge is set, cut it into cubes and enjoy.
