Papaya + Coconut Ice Blocks

These ice-blocks are something a little different for summer. They look so ‘cool’ and are sure to suit majority of dietary requirements. Packed with wholesome ingredients, there is no need to worry about additives, preservatives and sugar which are usually plentiful in store bought ice-blocks.
Also, papaya is a wonderful fruit and definitely underrated, it is packed with nutritional benefits. Like most tropical fruit, it is of abundance in summer cheap to buy! To name a few health benefits, papaya is particularly high in vitamin C and betacarotene, the pre-cursor to Vitamin A that is found in plants. Papaya is also loaded with antioxidants that can reduce inflammation through out the body, as well as containing an enzyme called ‘papain’, which can help support digestive function.
Feel free to make adjustments to these ice-blocks, adding other tropical fruits such as pineapple and mango to the papaya layer works very well!
INGREDIENTS LIST:
- COCONUT LAYER
- 1 can Chefs Choice organic coconut cream
- 1 tsp. Very Vanilla vanilla paste
- 1 Tbsp. organic lime juice
- ¼ cup Absolute Organic rice malt syrup
- PAPAYA LAYER
- 2 cups organic papaya, cubed
- 1 Tbsp. organic lime juice
- 1 tsp. organic lime zest
- 2 Tbsp. Absolute Organic rice malt syrup (optional)
METHOD:
- Add all papaya layer ingredients to a blender and blend until smooth.
- In a mixing bowl add coconut layer ingredients and whisk until well combined
- Add 2 tablespoons of coconut layer to each ice-block mould, then layer with about 2 tablespoons of papaya mixture. Finish by filling each mould with the remaining coconut mixture.
- Add sticks to mixture and then place in freezer for at least 6 hours. You may need to use a little warm water on the outside of the mould to help remove ice-block.
