PALEO ZUCCHINI FRITTERS

Make a batch of our Paleo Zucchini Fritters and store them in the fridge for up to 5 days. They are great for breakfast (we’re thinking with poached eggs and bacon if that is your thing), lunch (with a yummy salad) or dinner (with steamed veg).

Ingredients

2 medium zucchinis, finely grated

1 small brown onion, finely chopped or grated

1 free range organic egg

1/2 cup Almond Meal

1/2 tsp Baking Powder

80g goats feta, optional (not Paleo)

Salt & pepper to season

Organic Coconut oil, for frying

Method

  • 1. In a large bowl add all ingredients (except the coconut oil) and stir until combined. Season with salt and pepper.

  • 2. Add a generous amount of coconut oil to a fry pan over medium heat.

  • 3. Add a large spoon full of the mixture to the pan and fry until golden on both sides (be careful when flipping as they are fragile).

  • 4. To keep warm while cooking, store in a moderate oven if required.

  • 5. Enjoy your Paleo Zucchini Fritters with salad or steamed veg!
