PALEO ZUCCHINI FRITTERS
Make a batch of our Paleo Zucchini Fritters and store them in the fridge for up to 5 days. They are great for breakfast (we’re thinking with poached eggs and bacon if that is your thing), lunch (with a yummy salad) or dinner (with steamed veg).
Ingredients
2 medium zucchinis, finely grated |
1 small brown onion, finely chopped or grated |
1 free range organic egg |
1/2 cup Almond Meal |
1/2 tsp Baking Powder |
80g goats feta, optional (not Paleo) |
Salt & pepper to season |
Organic Coconut oil, for frying |
Method
1. In a large bowl add all ingredients (except the coconut oil) and stir until combined. Season with salt and pepper.
2. Add a generous amount of coconut oil to a fry pan over medium heat.
3. Add a large spoon full of the mixture to the pan and fry until golden on both sides (be careful when flipping as they are fragile).
4. To keep warm while cooking, store in a moderate oven if required.
5. Enjoy your Paleo Zucchini Fritters with salad or steamed veg!
