Vegan Mini Eggplant Pizzas
Kids love pizza and these mini eggplant versions are no exception! They’re simple to make and delightful to eat. They’re also great for entertaining friends and for a fun weeknight dinner.

Flannerys Own Organic Extra Virgin Olive Oil
1 large eggplant, cut into 1-2cm thick slices
Organic gluten-free pizza sauce
Vegetable toppings of your choice, e.g. fresh tomato, basil
Grated vegan cheese
1. Preheat oven to 200 degrees. Line a baking tray with baking paper.
2. Coat the eggplant slices in olive oil on both sides.
3. Spread 1 tbsp of pizza sauce on each slice, arrange vegetable toppings, then coat with cheese and bake until the cheese is melted and golden - approximately 5 minutes.
4. Serve and enjoy immediately!
