Matcha Chia Pudding

This matcha chia pudding is a perfect breakfast, rich in fibre, omega-3s & antioxidants from the combination of chia seeds & a high-quality matcha. The coconut cream & almond milk make it super creamy while the honey lightly sweetens it.

You can keep it simple or add coconut or greek yoghurt, blueberries, or banana for extra protein, probiotics & natural sweetness. It’s a nourishing, make-ahead option that supports balanced blood sugars and a relaxed, focused start to your day!

Serves: 2 (large)Time: 5 mins + setting

Ingredients:

  • ½ cup chia seeds
  • 2 tsp Nya matcha powder
  • ¼ cup coconut cream
  • 1 tsp honey
  • 1 cup almond milk
  • Yoghurt, to top
  • Blueberries, to top
  • Banana, to top

Method:

  1. In a small bowl, whisk matcha and honey together with a little bit of hot water (not boiling) until dissolved.
  2. Add chia seeds, coconut cream, almond milk and honey and whisk until combined. It should begin to thicken now.
  3. Pour into prepared jars and set in the fridge. This may take 30 minutes otherwise you can leave in the fridge for up to 3 days in an airtight container.
  4. Once ready to serve, top with yoghurt, blueberries and banana.
