Lucuma, coconut nice-cream!

Lucuma is a super food originating from Peru. It makes a delicious addition to many desserts including – smoothies, parfaits and ice-creams. Lucuma has been known to have anti-inflammatory, anti-aging and skin-repairing effects. It contains beta carotene, iron, zinc, vitamin B3, calcium, and protein and has a butterscotch / maple-like taste.

This recipe is vegan, gluten-free and makes two servings (or increase the measurements to freeze for another time)!

Ingredients

4 frozen organic bananas peeled and chopped

¼ cup Pure Harvest Organic Coco Quench coconut milk

1 tbs OWN Certified Organic Lucuma Powder

½ tsp vanilla extract

Cacao nibs or coconut flakes for topping

Method

  • 1. Place bananas, coconut milk, lucuma, and vanilla extract in a blender or food processor.

  • 2. Blend until smooth and creamy (i.e a soft serve consistency).

  • 3. Sprinkle with cacao nibs, coconut flakes, or other toppings and enjoy!
