Loaded Mexican Fries

These Loaded Mexican Fries are made with lean beef and black beans for protein and fibre, plus avocado for healthy fats! They’re a balanced take on classic loaded fries and packed with Mexican-inspired flavour and plenty of fresh toppings, making them a super easy but delicious meal to share!
Serves: 4
Ingredients:
- 600g Honest Graze Tallow Fries
- 250g lean beef mince
- 1 tsp olive oil
- 1/2 sachet Mingle Taco Seasoning
- 1 tbsp tomato paste
- ¼ cup water, if needed
- 100g canned black beans, drained and rinsed
- 1 avocado, thinly sliced
- ½ cup sour cream
- ¼ small red onion, thinly sliced
- 1 fresh red chilli, thinly sliced
- ¼ cup fresh coriander leaves
- 1 lime, cut into wedges
- Jalapenos, sliced
Method:
- Cook the Honest Graze Tallow Fries according to the packet instructions until golden and crispy.
- Meanwhile, heat the olive oil in a large frying pan over medium-high heat. Add the beef mince and cook, breaking it up with a spoon, until browned.
- Stir through the Mingle Taco Seasoning, tomato paste and water (if needed- this will depend on how much liquid is released from your mince). Add the black beans and cook for 2–3 minutes, stirring occasionally, until everything is heated through and well coated.
- Arrange the crispy fries on a tray or plate and spoon over the beef and bean mixture.
- Top with the avocado, sour cream, red onion, fresh chillies and coriander. Finish with a generous squeeze of lime juice!
