Loaded Baked Potatoes

These loaded baked potatoes are such an easy comfort meal. Potatoes are a really good source of fibre, vitamin C, and potassium, and the baked beans add some plant-based protein and extra fibre to help keep you satisfied. Paired with a high quality, grass-fed butter, cheese, and sour cream, it becomes a really nourishing, balanced meal that actually keeps you full whilst being delicious!

Servings: 2-4

Time: 70 minutes

Ingredients:

4 large potatoes
2 cans Honest To Goodness baked beans
2–3 tbsp butter
1 cup grated cheese
Sour cream, to serve
Spring onions, finely sliced

Method

  1. Preheat your oven to 200°C. Prick the potatoes with a fork and bake directly on the rack for 45–60 minutes, or until soft in the centre.
  2. Slice the potatoes in a cross. Push the sides down to open the potato up. Scoop or gently mash the inside with butter until soft and fluffy.
  3. Warm the baked beans in a small saucepan over medium heat.
  4. Spoon the mashed potato back into the skins. Top with cheese, then add the warm baked beans.
  5. Add a dollop of sour cream and sprinkle with spring onions. Serve warm.
