Lemon Oatmeal Cookies

A refreshing afternoon treat packed with the good stuff! These lemon oatmeal cookies are super simple to make and have absolutely no nasties – with oats for for slow-burning energy, only a touch of honey to sweeten, you will not feel bad for tucking into 1 or 10 of these tasty treats.

Ingredients:
  • 2 cups OWN oats
  • 1 cup OWN almond meal
  • ¼ cup OWN desiccated coconut
  • ½ organic lemon & rind
  • 2 tbsp coconut oil (melted)
  • 1 organic egg
  • 2 tbsp black sesame seeds
  • 2 tsp baking powder
  • 1 tbsp Himalayan salt

Method:
  1. Line a large baking tray and pre heat oven to 190 degrees
  2. Blend oats & almond meal in blender until fine flour consistency
  3. Add remainder of ingredients and stir until well combined
  4. Place mixture in fridge for 10 mins (this should help thicken & harden mixture to make it easier to form into cookie shapes)
  5. Form desired cookie shapes & sizes on your baking tray (be sure to leave a good space between each cookie as these will expand)
  6. Bake for 10 minutes or until golden brown
  7. Let cool and store in air tight container
  8. Enjoy!
