Instant Broccoli Soup

Instantly supercharge your immunity with this quick, nourishing soup. Umami broth is packed with slow-cooked vegetables so you’re still feeding on their goodness without spending hours in the kitchen. Broccoli and pepitas are good sources of zinc to help protect you against colds and flu, while coconut yoghurt encourages optimal gut health.

Ingredients

400ml The Goods Slow Cooked Umami Broth

1 Large Head Organic Broccoli, stalks removed and cut into florets

Flannerys Own Himalayan Salt

Cracked Pepper

Coyo Organic Coconut Yoghurt Alternative, to serve

Flannerys Own Organic Green Pepitas, to serve

Fresh mint leaves, to serve

Seeds of your choice, to serve (we recommend chia and linseeds)

Method

  • 1. Bring the umami broth to the boil in a large saucepan

  • 2. Add broccoli florets and boil rapidly.

  • 3. Once you can easily cut through the florets, remove the saucepan from the heat.

  • 4. Using a slotted spoon, place the florets in a blender. Fill the blender halfway with broth from the saucepan. Add a pinch of salt and cracked pepper, then blitz until the broccoli is pureed to a smooth consistency, adding more broth if it’s too thick.
