Grilled Pineapple Guacamole
The perfect summer snack to partner our Flannerys Own Corn Chips – with added sweet grilled pineapple chunks!
Ingredients
- One Organic Pineapple
- Two Organic Avocados
- Juice of 1 Lime
- 1/3 of a red onion, finely diced
- One Organic Tomato, diced
- Fresh coriander
- 1 small chilli or chilli flakes
- Flannerys Himalayan Salt and fresh black pepper to season
- Flannerys Certified Organic Corn Chips
Method
- Preheat the grill or the bbq
- Remove the outer skin and top from the pineapple and slice into bite sized pieces. Drizzle with a little olive oil and grill, turning a few times so that both sides are browned
- Leave to cool before adding it to the rest of the mix.
- Remove flesh from the avocados into a bowl and mash with a fork. Then add diced tomatoes, onion, finely chopped chilli and handful of chopped fresh coriander, lime juice and salt & pepper.
- Gently mix together, adding the pineapple pieces last once cooled.
- Serve with Flannerys Organic Corn chips!
