gluten free | ready in 40 minutes | serves 12

These gluten-free, vegan cookies are a great alternative to store brought baked goods full of processed ingredients and fillers. You can whip up a tray of these in less than a half hour, and the other bonus is, they only require one bowl and no food processor or blender, which means less cleaning!

Ingredients

3 cups almond meal

6 tablespoons Organic Coconut Oil, High Heat Cooking

6 tablespoons Organic Brown Rice Malt Syrup

2 tablespoons filtered water

100g dark chocolate (roughly chopped)

Method

  • 1. Preheat your oven to 150°C and line a baking tray with greaseproof paper.

  • 2. Combine the almond meal, rice malt syrup, coconut oil and water in a large bowl.

  • 3. Gently fold through the chopped dark chocolate and form 12 cookies and place on the prepared tray.

  • 4. Bake for 30 minutes or until golden brown. Leave to cool off before eating!
