Easy Breakfast Loaf

This yummy breaky loaf is perfect for a quick and easy breakfast or even a cheeky little snack! Packed with all the good stuff you won’t feel guilty after devouring a slice or two. We recommend to serve toasted, smeared with butter.

Ingredients:
  • 1 large organic banana (mashed)
  • 1 tbsp OWN coconut sugar
  • 2 cups OWN almond meal
  • ¼ cup OWN wholemeal spelt flour
  • 2 organic eggs
  • 1 tbsp OWN coconut oil
  • 2 cups nut milk (we love nutty bruce)
  • 1 tbsp maple syrup (we love absolute organic)
  • ¼ cup OWN Pepitas
  • ¼ cup OWN almonds (chopped roughly)
  • ½ cup frozen blueberries

Method:
  1. Pre heat oven to 170 degrees and line a loaf tin
  2. Mash banana and whisk eggs in bowl
  3. Add remainder of ingredients and stir until combined
  4. Empty mixture into lined loaf tin and pop into the oven for 1 hour
  5. Leave to completely cool before slicing
