Crunchy Coleslaw
Ingredients:
- 2 cups of washed and thinly sliced organic kale
- 1 cup of washed and thinly sliced organic red cabbage
- 1 cup of thinly sliced organic apple
- 1 TBS Dijon Mustard
- 1 TBS Flannerys Certified Organic Honey
- 3 TBS Flannerys Certified Organic Extra Virgin Olive Oil
- 1 TBS Flannerys Certified Organic Apple Cider Vinegar
- 3/4 cup chopped Flannerys Walnuts or Almonds
- Juice of half a lemon
- Himalayan salt and ground pepper to season
Method:
- Toss the cabbage, kale, nuts and apple together
- Make the dressing by whisking together the remaining ingredients
- Either serve the dressing on the side or lightly pour over and toss the salad again to cover.
- Serve with a sprinkle of fresh herbs ie. parsley
