Coconut Apple Crumble
We featured Ange, from the Gratitude Project, as a #FlannerysFoodie and got to know a little more about this silver-lining exposing mum, wife, writer, speaker, health coach and self love junkie! You can read the interview HERE. Ange also got creative in the kitchen with some of our Flannerys Own products and created this Coconut Apple Crumble recipe – check it out below.
Ingredients (Filling)
- 6 granny smith apples – peeled cored and chopped
- 3/4 cup pure apple juice
- 1 tsp vanilla paste
- 1/2 tsp cinnamon
Ingredients (Topping)
- 1/2 cup Flannerys Own Blanched Almond Meal
- 1/2 cup Flannerys Own Organic Rolled Oats
- 1/3 cup Flannerys Own Organic Coconut Chips
- 1/2 tsp cinnamon
- 1/2 cup Flannerys Own Macadamia Halves, chopped
- 1/3 cup honey
- 1/4 cup Flannerys Own Organic Coconut Oil – melted
Method
- For the filling preheat your oven to 190 degrees.
- Place chopped apples, juice, vanilla paste and cinnamon into a large saucepan and heat over medium heat, covered, for ten minutes. Take off the lid and simmer for another 5 minutes or until the apples are nice and soft.
- For the topping combine almond meal, oats, coconut flakes, cinnamon and macadamia nuts in a bowl. Add the honey and coconut oil and stir until just combined with a spoon and is still crumbly.
- I served these in individual oven safe bowls but you could do it all in one large dish.
- Distribute the apple filling into your serving bowl/s. Crumble the topping evenly over the top and place in the oven to bake and brown for 25-30 minutes. Keep an eye on them to make sure they don’t over brown.
- Cool slightly and serve with some creamy banana nice-cream!
