Chicken and Date One Pot Wonder

Dates have been the shining star in a number of our sweet treats and dessert recipes, however they can also be used to balance flavours in savoury dishes. Our hearty Chicken and Date One Pot Wonder features an array of delicious herbs and spices and is perfect for the whole family. So what are you waiting for? Ingredients

  • 4 TBS Flannerys Organic Extra Virgin Olive Oil
  • Whole organic chicken – roughly 1.5kg
  • 2 onions, peeled and diced
  • 2 bay leaves
  • 4 garlic cloved, peeled and minced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 150g Flannerys Organic Jasmine Rice (you could also use Flannerys Organic Brown Rice or Quinoa)
  • 80g Flannerys Lentils
  • 700ml organic chicken stock, hot
  • 12 Flannerys Dates, pitted
  • 1 small bunch fresh coriander, stalks removed, leaves picked and torn
  • Flannerys Slivered Almonds – to garnish
  • Flannerys Himalayan Salt and freshly ground black pepper to season

Method

  • Clean & season whole chicken with salt and pepper
  • Heat olive oil in large pot – add the whole chicken, turning to brown evenly.
  • Lower the heat, remove chicken and add onions and bay leaves. Cook until onions soften (15 minutes)
  • Next add spices (garlic, cumin, coriander, cinnamon) then the rice & lentils – stir to cover completely.
  • Return the chicken to the pot, pour over the hot stock, season again with salt and pepper – cover and simmer gently for 15 – 20 minutes.
  • Stir in the dates, cover again and simmer for a further 15 minutes, or until the chicken is cooked through and the rice and lentils are tender.
  • Remove from the heat and stir in most of the coriander
  • Top with almonds and fresh coriander to serve, enjoy!
