Cauli and Kale Spiced Fritters

A batch of these tasty (and easy!) spiced fritters will not last long – a great option for the entire family. Cauliflower is packed with potassium and fibre for aiding digestion, this vegetable is amazing to cram into your diet! It also has anti-inflammatory properties. Combined with spices, vegetables and Fraser Coast free range organic eggs these savoury pancake style snacks will go down a treat!
Ingredients:
- ½ Organic Cauliflower (chopped)
- 3 Fraser Coast free range organic eggs (whisked)
- ¼ cup OWN almond meal
- ¼ cup ‘the cheese board’ fetta (crumbled)
- 3 pieces organic broccoli (chopped)
- 2 stems organic kale (chopped finely)
- 1 tbsp simply organic paprika
- 1 tbsp cumin
- 1 tbsp chilli flakes (optional)
- 1 tbsp organic olive oil
- salt & pepper to taste
Method:
- Boil cauliflower & broccoli on stove top until soft
- Mash cauliflower & broccoli, then combine with chopped kale, fetta, spices, almond meal and eggs
- Heat olive oil in a pan on medium/high heat
- Add mixture to the pan in small pancake shapes and cook for 1 minute either side or until golden brown
- Serve with your favourite toppings!
