Blueberry Almond Granola Bars

These muesli bars are a really easy, nourishing option to have on hand when you need something quick but satisfying. The oats, nuts, and seeds provide a great mix of fibre, healthy fats, and a bit of protein to help keep you full and your energy steady while the dried fruit adds natural sweetness.

Time: 20 mins + set

Ingredients

2 cups rolled oats, toasted
¾ cup roasted almonds, roughly chopped
⅓ cup dried blueberries
⅓ cup dried apricots, finely chopped
¼ cup chia seeds
¼ cup hemp seeds
½ teaspoon cinnamon
½ cup almond butter
½ cup honey
Pinch of salt

Method

  1. Preheat the oven to 180°C and line a 20cm square baking tin with baking paper.
  2. In a large bowl combine the oats, chopped almonds, dried blueberries, dried apricots, chia seeds, hemp seeds, cinnamon and salt.
  3. In a small saucepan over low heat, gently warm the almond butter and honey until smooth and easy to pour.
  4. Pour the almond butter mixture over the dry ingredients and mix very well until everything is evenly coated.
  5. Transfer the mixture to the lined tin and press down very firmly.
  6. Bake for 10–12 minutes. You’re not trying to brown them much, just helping them set.
  7. Let the slab cool completely in the tin (this is when they firm up).
  8. Lift out and slice into bars.
