Black Bean Quinoa Burgers
These patties are great for those spring BBQ’s. Team them with you favourite salads & a dash of vegan mayo – yum!
Ingredients
1 small brown onion, diced |
1 small yellow capsicum, diced |
1 red chilli, finely chopped |
1 cup finely chopped kale |
1 1/2 cup black beans |
1 tsp Flannerys Own Fine Himalayan Salt |
1 tsp ground paprika |
1/2 tsp ground cumin |
1/2 tsp ground pepper |
1/2 cup gluten free breadcrumbs |
1/2 cup Flannerys Own Quinoa, cooked |
2 TBS Flannerys Own Linseed Meal + 5 TBS water (mixed together) |
Coconut oil for cooking |
Method
1. In a medium fry pan add the onion, capsicum and chilli with a little coconut oil. Saute until the onions go translucent. Add the kale & saute until soft.
2. Transfer to a bowl with the black beans, salt, paprika, cumin, pepper, breadcrumbs, quinoa and linseed mix.
3. Mash mixture together with a fork and then form into patties.
4. Fry or bake patties until golden.
