Best Ever Gluten-Free Banana Bread

What’s being cozy without banana bread? Delicious, soft and comforting – it’s not hard to make and is a yummy treat to take to school or work. The addition of chocolate chips and walnuts – and being free of gluten – makes this the best ever banana bread set to change your life!

Ingredients

2 cups Flannerys Own gluten free flour

1 tsp aluminium-free baking powder

1 tsp bicarb soda

¼ tsp Himalayan fine sea salt

½ cup certified organic Rapadura or coconut sugar

110g butter, ghee or coconut oil, softened

2 free range, organic eggs

2 tbsp milk of choice

½ tsp vanilla

4 – 5 ripe organic bananas, mashed

1 cup organic GF chocolate chips

¼ cup insecticide-free walnuts, chopped

Method

  • 1. Preheat oven to 175 degrees. Lightly grease a loaf pan (9 x 5 inches).

  • 2. Combine flour, baking powder, bicarb soda and salt in a large bowl. Set aside.

  • 3. In another bowl, cream together sugar and butter. Stir in eggs, milk, vanilla, mashed bananas, chocolate chips and walnuts until well combined. Add to the flour mixture, stirring until combined.

  • 4. Pour batter into loaf pan. Bake for 50 – 55 minutes, until a skewer inserted into the centre comes out clean. Let cool, before turning onto a wire rack. Enjoy served warm!
