Bang Bang Chicken Bowls

This bang bang chicken bowl is a simple, balanced meal that is a go-to nourishing lunch or dinner option! You’ve got protein from the chicken, fibre from the vegetables and rice, healthy fats from the avocado, and a light, creamy bang bang sauce to bring it all together. It’s satisfying, fresh and flavourful whilst supportive of steady energy to get you through the day.
Serves: 2 | Time: 20 minutes
Ingredients:
- 300–350g chicken thigh, sliced
- Salt + pepper
- 1 tsp smoked paprika
- 1 pack The Stock Merchant bone broth rice
- 1 cucumber, sliced
- 1 carrot, grated or julienned
- 1 cup purple cabbage, finely shredded
- 1 avocado, sliced
- Fresh coriander, to serve
- 2 tbsp Greek yoghurt
- 1 tbsp mayo
- 1–2 tsp Mingle sweet chilli (to taste)
- 1 tsp sriracha (more if you like heat)
- 1 tsp honey
- 1 tsp rice vinegar
- Sesame seeds
- Extra coriander
Method:
- Dice the chicken and season with smoked paprika, salt and pepper.
- Heat oil in a pan over medium-high heat and cook chicken for 6–8 minutes until golden and cooked through. Set aside to rest.
- Mix all bang bang sauce ingredients together in a small bowl until smooth. Taste and adjust heat or sweetness if needed.
- Prepare the salad ingredients and set aside.
- Cook the bone broth rice according to packet instructions and set aside.
- Divide rice between bowls then top with cabbage, carrot, cucumber, avocado and chicken.
- Drizzle generously with bang bang sauce.
- Sprinkle with sesame seeds and fresh coriander to finish!
