Baked Pear & Vanilla Quinoa Porridge

This baked pear and quinoa porridge is a warm, nourishing breakfast that supports steady energy and gentle digestion. Quinoa provides plant-based protein and fibre to help keep you satisfied, while the baked pear adds natural sweetness in a form that’s easier on the gut. We’ve lightly sweetened it with sultanas and honey to make it a simple, grounding meal that feels comforting and supportive to the body.

Ingredients:
- 1 pear, peeled
- ½ tsp ground cinnamon, divided
- ⅓ cup quinoa, rinsed well
- ¾ cup coconut milk
- ½ tsp vanilla extract
- 1 tbsp sultanas
- 1–2 tsp honey, plus extra to serve if desired
Method:
- Preheat the oven to 180°C (160°C fan-forced). Place the pear on a sheet of foil and sprinkle with cinnamon and a drizzle of honey. Wrap the pear up tightly and bake for 20–25 minutes, or until soft.
- Meanwhile, combine the rinsed quinoa, coconut milk, vanilla, remaining ¼ teaspoon cinnamon and sultanas in a small saucepan. Bring to a gentle simmer over medium-low heat.
- Cook for 15-20 minutes, stirring occasionally, until the quinoa is tender and the porridge is creamy. If it becomes too thick, stir through a splash of extra coconut milk or water.
- Spoon the quinoa porridge into a bowl and top with the warm baked pear. Finish with an extra drizzle of honey, crushed pecans and a sprinkle of cinnamon, if desired.
