Baby Spinach Omelette

For a protein-packed breakfast, omelettes are a great choice. Eggs contain a powerful punch of protein, antioxidants, essential vitamins and minerals such as vitamin A, vitamin E and iron. It’s also one of the few foods that naturally contain vitamin D (found in its yolk) – vital for strong bones and muscles. Adding spinach gives an extra iron boost, essential for oxygen transport around the body, including to muscles.

Gluten free, vegetarian, high protein

Ingredients

2 Organic Eggs

1 cup Baby Spinach Leaves

2 tbsp Grated Parmesan Cheese (or Feta)

2 tbsp Fresh Parsley, Chopped

Sea Salt and Pepper

Method

  • 1. In a small bowl, lightly whisk the eggs. Stir in the spinach, cheese and parsley. Season with salt and pepper.

  • 2. Heat oil in a small fry pan over medium heat. Pour the mixture in and cook about 3 minutes.

  • 3. Flip and cook other side for 2-3 minutes.

  • 4. Reduce heat, fold halfway over - pressing down with the spatula and cook until golden. Serve immediately.
