Almond butter & cacao energy balls are a quick and easy way to satisfy a sweet craving or give you the extra boost you need to get through a busy day. Packed with nutrients these balls are sure to hit the spot. Almond butter is a great source of protein so teamed with oats it is the perfect snack to keep you going for longer. These balls are best kept in the freezer giving them a fudgy texture.

Method:
  1. Soak dates in boiling water
  2. Add oats, coconut, cashews, almonds, Pepitas, sunflower seeds, chia seeds & cacao powder to blender and pulse until nuts are crushed up (I prefer chunkier balls so I only pulse slightly but if you like smooth texture blend a lot)
  3. Drain dates and add to blender along with almond butter – blend until combined (if the mixture seems a bit dry or crumbly add a touch of water.
  4. Roll into balls and place in container in freezer or fridge to set
